5. Divide the dough into 8 equal pieces and form them into balls. Cover them loosely with plastic wrap to keep them from drying out.

6. Whisk together the remaining egg with 2 tablespoons water in a small bowl. Set this egg wash aside.

7. Set an oven rack in the center position and preheat the oven to 400°F (200°C). Line a baking pan with parchment paper.

8. Working with one dough ball at a time, flatten it into a disk and roll it out thin, to about 8 inches in diameter. Add one portion of the filling to the center of the disk, leaving about a 3⁄4-inch edge, void of filling, all around. Fold the dough over the filling to create a half-moon. Roll and twist the edge to secure the filling. Brush the top of the empanada with egg wash. Repeat with the remaining dough balls and filling.

9. Place the empanadas on the prepared baking pan and bake for 15 to 20 minutes, until golden.
